This simple bread recipe is both fitting and delicious, the perfect addition to a Saint John the Baptist Feast Day. You can eat this bread, which is actually more cake-like, warmed or cold, although there is nothing nicer than the smell and taste of freshly baked warm bread. Enjoy!

Ingredients
- 2/3 cup firmly packed dark brown sugar
- 1/3 cup milk (2% or whole milk is best)
- 2 cups all-purpose flour
- 1-1/2 tsp baking powder
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1/8 tsp ground cloves
- 2 large eggs (best at room temperature)
- 1/2 cup wild honey (dark, robust and amber honeys, like dark wildflower, buckwheat, or heather honey pair best with the bold spices in this recipe)
- 1/3 cup canola oil (alternatively, you can use 1:1 vegetable, safflower, avocado, or coconut oil).
Preparation
- Preheat your oven to 325°. In a small saucepan, combine the brown sugar and milk. Gently cook and stir over low heat until the sugar dissolves and then remove from heat.
- In a large bowl, add baking powder, cinnamon, nutmeg, and cloves, whisking until evenly blended. In another bowl, whisk eggs, honey, oil, and the brown sugar mixture until well blended then add this to the flour mixture and stir just until moist.
- Pour the batter into a lightly greased 8×4-in. loaf pan.
- Bake for 50-60 minutes (check by inserting a toothpick into the centre of the loaf. If it comes out clean, the bread is cooked.)
- Allow the bread to cool in the pan for about 10 minutes before removing it and placing it on a wire rack where you will leave it to cool.
- While cooling, stir the glaze ingredients together in a small bowl until smooth, and then drizzle over the bread.
